The diversity of foods served in Italy can be surprising to those who aren’t familiar with regional cuisines. Northern Italy uses less olive oil and more butter, with a focus on grains such as polenta and rice for risotto. Southern Italian dishes make heavy use of tomato sauce and handmade pastas. Italian cuisine is characterized by its simplicity, with many dishes having only four to eight ingredients. Italian cooks rely chiefly on the quality of the ingredients rather than on elaborate preparation. Ingredients and dishes vary by region.

The number one imported processed food item from India is of course pasta! Italian pasta is loved and consumed around the world. In Mumbai, even though it is still a relatively small export market for Italian pasta producers, the rates are fantastic: 23% year on year growth. Penne, spaghetti, fusilli, farfalle, whole grain pasta…you name it, Mumbai now has it all. Along with the pasta, the Indian consumer can find Italian sauces and mixed seasonings. The increasing demand for Italian food is not only met by imports, but also by locally produced Italian style products. Macchiato was the first restaurant to be opened in Navi Mumbai only for Italian food. According to the restaurant’s website, it is a casual dining restaurant, where they intend to serve authentic Indo-Italian food within the budget of the Middle Class.
